Last month, Sculpture Hospitality helped a Christchurch bar discover it had given away $18,000 worth of wine because the pour lines printed on its wine glasses were wrong.
Bar staff poured wine to what they thought was a 150ml line, but it actually measured 170ml. The venue claimed $18,000 in losses from over-pouring wines from wrongly marked wine glasses.
“It came to light that the pour lines were marked incorrectly, meaning that we were oversupplying every glass of wine sold by the glass, which was a substantial amount of product (around $18k),” the owner said.
Sculpture Hospitality not only helped this client identify why his gross profit was so poor, but also assisted as an independent party to prove the amount of product overpoured, it’s value and loss to the business.
How confident are you that your glassware is marked accurately or that you are charging correctly, based on the amount of product poured to the marking?
Do not assume that the markings on your glassware are correct. Each time you receive a new order, always check them. Sculpture Hospitality can do this for you, so that you know they are accurate. As a result, your gross profit will be much closer to what you have set.
